শীতের পিঠা পুলি

বাঙালিরা তাদের শীতকালীন পিঠা বা ঐতিহ্যবাহী বাড়িতে তৈরি কেক এর জন্য সুপরিচিত। পিঠার সুগন্ধ ছাড়া শীত অসম্পূর্ণ যা সবার নজর কাড়ে। ঐতিহ্যগতভাবে, বাংলাদেশে পিঠা তৈরি করা হয় এবং বিশেষ অনুষ্ঠানে পরিবেশন করা হয়, যেমন বর বা কনেদের গ্রহণ করার সময়, অতিথিদের আপ্যায়ন করা এবং পরিবারের সদস্য, আত্মীয়স্বজন বা বন্ধুদের বিশেষ মিলন মেলার আয়োজন করা হলে।

 

বাংলাদেশের ঐতিহ্যবাহী শীতের পিঠা

শীতের আগমনের সাথে সাথে, আসুন আমরা ৬টি সুস্বাদু খাবারের দিকে নজর দিই যা সবাই ক্রেভ করে থাকে।

 

১. পাটিশাপ্টা

পাটিশাপ্টা হল লম্বা এবং পাতলা আয়তাকার ক্রেপ রোল যা শ্রেডেড কোকোনাট বা ক্যারামেলাইজড গুড় থেকে তৈরি সুস্বাদু পিউরি বের করে। মিহি চালের আটা এবং সুজি দিয়ে পাতলা ক্রেপ তৈরি করা যায়। এই পিঠাগুলির উষ্ণ, গোয়ি এবং মিষ্টি স্টাফিং হলো হাইলাইট কারণ এগুলো অবিলম্বে হার্ট এবং ক্ষুধাকে স্যাটিসফাই করে। ফিলিংটি প্রায়শই খীর বা ক্ষীরশা দ্বারা প্রতিস্থাপিত হয়, যা হলো এক প্রকার ভেজা পুডিং যা বাঙালিরা মিষ্টি হিসাবে খেতে পছন্দ করে।

 

২. ভাপা পিঠা

ভাপা পিঠা একটি ক্লাসিক বাংলাদেশী শীতকালীন পিঠা। বেশিরভাগ পরিবারই তাদের বাড়িতে এই সুস্বাদু খাবার তৈরি করে। ভাপা পিঠা হল স্টিম করা চালের কেক যা তাদের এক্সটেরিয়ার পার্ট হিসাবে ফ্রেশ্ললি গ্রাউন্ড আটা ব্যবহার করে। সাদা টেক্সচার্ড কভারটি অনেকটা দক্ষিণ ভারতীয় খাবারের মতো। রাফ এক্সটেরিওর ভেদ করার সাথে সাথে তাদের ওয়েলকাম করা হয় মিষ্টির একটি চমকপ্রদ ব্লাস্ট দিয়ে যা গুড় থেকে উদ্ভূত হয়।

 

৩. চিতই পিঠা

এই পিঠাগুলি বর্ণনা করার নিখুঁত উপায় হল এদেরকে রাইস-বেসড প্যানকেক নামে ডাকা। চিতই পিঠা হল বাংলাদেশীদের জন্য রাস্তার পাশের আরেকটি প্রিয় শীতের খাবার। এই পিঠাগুলি সাধারণত স্বাদহীন বা সামান্য নোনতা হয়, তবে যেহেতু এগুলি বিভিন্ন মশলা সহ আসে, তাই সবাই এগুলো খেতে পছন্দ করে। মশলাগুলির মধ্যে রয়েছে সরিষা, ধনেপাতা এবং কখনও কখনও শুকনো মাছের পেস্ট।

 

৪. পুলি পিঠা

পুলি পিঠা বাংলাদেশের জনপ্রিয় এক ধরনের ঐতিহ্যবাহী পিঠা। এটা ডাম্পলিং এর ডেজার্ট ভার্শন। এই পিঠাটি চালের কেক এবং নারকেল, চিনি, গুড় এবং দুধযুক্ত সুইট ফিলিং দিয়ে তৈরি করা হয়।

 

৫. তেল পিঠা

পাকান পিঠা, যাকে সাধারণত তেলের পিঠা বলা হয়, চালের আটা দিয়ে তৈরি করা হয় এবং তারপর গরম তেলে ভাজা খেজুর চিনি দিয়ে মিষ্টি করা হয়। এই পিঠাগুলি বেশিরভাগই বাইরের দিকে ক্রিস্পি এবং ভিতরে স্টিকি এবং নরম।

৬. নকশি পিঠা

নকশি পিঠা বাংলাদেশের গ্রাম ও শহরাঞ্চলে তৈরি বিভিন্ন প্যাটার্ন দিয়ে ডিজাইন করা একটি চালের পিঠা। এটি একটি কালিনারি আর্ট এবং ফিমেল ফোক আর্ট। এই পিঠাটি কাঁচা চাল এবং তারপর ফুল , এবং খেজুর, ডাল, সূঁচ, প্যাটার্নযুক্ত কাদামাটি, পাথর, কাঠ বা ধাতব ছাঁচ ব্যবহার করে ডোগুলো হ্যান্ডক্রাফট করা হয়। তারপর গরম তেলে পিঠা ভেজে চিনির সিরায় ডুবিয়ে রান্না শেষ করে।

1. Patishapta

Patishaptas are long and thin rectangular crepe rolls that ooze out delicious puree made from shredded coconut or caramelized molasses. The thin crepes can be made with refined rice flour and semolina. The warm, gooey and sweet stuffing of these pithas are the highlights as they immediately satisfy the heart and the appetite. The filling is often replaced by kheer or kheersha, the wet pudding that Bangalis love to have as dessert.

 

2. Bhapa Pitha

Bhapa pitha is a classic Bangladeshi winter pitha. Most households prepare this delicious goodness in their homes. Bhapa pithas are steamed rice cakes that use freshly ground flour as their exterior portion. The white textured cover is similar to many South Indian dishes. As one breaks through the rough exterior, they are greeted with a scrumptious burst of sweetness that evolves from the jaggery.

 

3. Chitoi Pitha

The perfect way to describe these pithas is to call these rice-based pancakes. Chitoi pithas are another street-side favorite winter snack for Bangladeshis. These pithas are usually tasteless or a little salty, but since they come with various condiments, people love to have them all the time. The condiments include dips of mustard, coriander, and sometimes even dried fish paste.

 

4. Puli Pitha

Puli pitha is a type of traditional pitha popular in Bangladesh. It's the desert version of dumplings. This pitha is made with rice cakes and sweet fillings containing coconut, sugar, molasses, and milk.

 

5. Tel Pitha

Pakan pitha, commonly called tel er pitha, is made from rice flour and then sweetened with date palm sugar to be fried in hot oil. These pithas are mostly crispy on the outside while sticky and soft on the inside.

 

6. Nakshi Pitha

Nakshi Pitha is a rice cake with various patterns made in villages and urban areas of Bangladesh. It is a culinary art and important female folk art. This pitha is made from raw rice and then flowers, and the patterns on the dough are handcrafted using dates, twigs, needles, patterned clay, stone, wood, or metal molds. Then they finish cooking by frying the pitha in hot oil and dipping it in sugar syrup.
